Cookie exchange party...

I'm attending a cookie exchange over at Jenn's nook I'm alittle late for the gift giveaway but I thought I could still list a few cookies that I love to make durring the Christmas season!!

Apple Glazed cookies
INGREDIENTS
1/2 cup shortening
1 1/3 cups packed brown sugar
1 egg
2 cups sifted all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 cup chopped walnuts (optional)
1 cup apples - peeled, cored and finely diced
1 cup raisins
1/4 cup milk
1 1/2 cups sifted confectioners' sugar
1 tablespoon butter
1/2 teaspoon vanilla extract
2 1/2 tablespoons half-and-half cream


DIRECTIONS
Beat shortening and brown sugar together until light and fluffy. Beat in egg and blend thoroughly.
Stir together flour, baking soda, salt, cinnamon, cloves and nutmeg.
Stir half the dry ingredients into creamed mixture. Stir in nuts, apple and raisins, then stir in remaining half of dry ingredients and milk. Mix well.
Drop from tablespoon 1 1/2 inches apart onto lightly greased baking sheet. Bake in a preheated 400 degree oven for 10-12 minutes. Remove cookies to racks and while still warm, spread with glaze.
To make Glaze: Combine powdered sugar, butter, vanilla and enough cream to make glaze of spreading consistency. Beat until smooth. Spread on warm cookies. I also like to add some extra crushed nuts onto of the glaze.



Another favorite cookie that my mother-in-law begs me to make every year...
Chocolate Chip Biscotti


2 Cups Flour
1 and a 1/2 TSP Baking Powder
1/4 Tsp salt
3/4 Cups sugar
1/2 Cup (1 stick) butter @ room temp
2 Large eggss
1Cup semisweet chocolate chips

Set oven 350 degrees
Line baking sheet with parchment paper

Wisk flour,powder, and salt. In large bowl beat egg one at a time and add flour mixture...then fold in chocolate chips.
Form dough 16 inches long and 3 inches wide...almost like a log shape.
Bake 30 min
Cool 30 min
cut into sliced pieces about 1/2-1 thick
Then place on cookie sheet again with cut sides down and bake again for 15 min.
Cool completely and serve....For Christmas I dip the end of the cookie in melted chocolate and add red or green sprinkles for color:-)
