Happy little hearts are baking

This week we made our homemade granola which is on demand at our house very often!! It's a quick and fun recipe to make which is a good thing because it needs to be made almost weekly in our house..
4C Rolled oats
1 and 1/2 C chopped almonds
1/2C brown sugar
1/2 tsp Cinnamon
1/4 C vegetable oil
1/4 C honey
1 tsp van
1 and 1/2 C raisins or dried cranberries (optional)

Mix oats, almonds, brown sugar, and cinnamon. In saucepan mix oil and honey on low heat then whisk in the vanilla. Pour liquid over oat mix and mix well. Carefully spread mix over 15x10in baking pan.
Bake 30 min @300 making sure to stir the mixture every 10min. Take out and let cool store in an airtight container and enjoy!!

If you look closely you can see that this picture was taken when Rick was stirring the oatmeal but he just so happened to stir it out of the bowl by accident exactly at the same time as I snapped this shot.. (This was the highlight of the entire afternoon)

Come join in on the fun over at happy whimsical hearts to show us what you've been baking up this week:)

  3. oh yummmm thanks, Jenn. I promptly copied this one! I am taking the kids out of school for homeschool after they finish in June. I regret when I had sent them back because of my stupid health issues.....we figure we will just roll with the punches this time, and take time off when/if needed, that is life.
